2 fingers of good Irish Whiskey
1 teaspoon of brown sugar
Strong, freshly brewed coffee
Double cream (as is or whipped to stiff peaks)
Wam a coffee “glass” gently in hot water.
Pour the whiskey and sugar into the glass and stir. Add the coffee, filling the glass to about 1/4 inch from the top of the glass. Gently pours the cream over the back of a spoon onto the coffee mixture to prevent splashing and to help the cream float on the top. You can grate chocolate on top if desired.
Makes 1 Irish Coffee
3 tablespoons unsweetened cocoa powder
1/4 cup sugar
4 cups milk
1/4 teaspoon vanilla
Blend the cocoa and the sugar in a small bowl.
Scald the milk in a medium saucepan. Mix about 1/3 cup of the hot milk into the cocoa-sugar mixture, then pour cocoa mixture into hot milk in the saucepan; stir until well blended. Stir in vanilla. Serve with whipped cream. Add Peppermint Schnapps before the whipped cream.
