1 cup butter, softened
1 cup white sugar
1 cup packed brown sugar
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 1/2 teaspoons ground cinnamon
3 cups quick cooking oats
Cream the first 3 ingredients together in a mixing bowl. Beat the eggs in slowly, one at a time, then stir in vanilla. Combine flour, baking soda, salt, and cinnamon; stir into the creamed mixture. Mix in the oats.
Cover the dough and chill it for a minimum of 1 hour
Preheat your oven to 375 degrees F
Grease or light spray with cooking spray, your cookie sheets.
Roll the dough into round, half dollar sized balls, and arrange them 2 inches apart on your cookie sheets. Flatten each cookie, I use a large fork dipped in sugar.
Bake for 8 to 10 minutes. Cool on the baking sheet for 5 minutes. After 5 minutes, transfer to a wire rack to cool completely.
Makes about 2 dozen cookies
