2 1/2 cups of flour
1/2 cup granulated sugar
2 teaspoons of caraway seed (optional)
1 1/2 teaspoons of baking powder
1 teaspoon of ground cinnamon
1/2 teaspoon of salt
1/2 cup of currants or raisins
1 1/4 cups of buttermilk
2 eggs
1/2 teaspoon vanilla extract


First you will want to preheat your oven to 350 degrees F

You can either make this in a cake pan or make an artisan loaf using your own shape and design. If using the pan, lightly grease a 9 inch round cake pan.

In a large mixing bowl, mix and combine the flour, sugar, caraway seed (if using) baking powder, baking soda, cinnamon and salt. Mix in the raisins.

In a separate mixing bowl, mix the buttermilk, eggs and vanilla. Stir the wet ingredients into the dry ingredients. Pour into the prepared pan.

Bake about 45 minutes or until the toothpick test comes out clean. Insert the toothpick into the center of the loaf. Remove the pan from the oven and cool on a wire rack for about 10 minutes. Remove the loaf from the pan and put the loaf on the wire rack to completely cool.

Makes 1 9 inch round loaf of Irish Soda Bread
