1 (8 ounce) package cream cheese, softened
3 cups confectioners’ sugar, sifted
3 cups semisweet baking chocolate, melted SEE NOTE
1 1/2 teaspoons vanilla *SEE NOTE
In the bowl of your stand mixer, beat cream cheese until smooth. If a stand mixer is not available, use an electric mixer and a large mixing bowl.
Adding small amounts at a time, gradually beat in the confectioners’ sugar until well blended. Stir in the melted chocolate and vanilla and beat until smooth and no streaks remain. Refrigerate for 1 hour.
Shape into 1 inch balls and roll the candy in any topping you please, or decorate with icing of choice. The possibilities are limitless here. You can roll them in ground pecans, crushed cookies, candy etc.
For the chocolate, you can use any type of chocolate you would prefer as long as it is semi sweet. You can use chocolate chips, German chocolate etc. You can even use milk chocolate but you will have to adjust the confectioners’ sugar or the Truffles may be too sweet.
If you want to make these adult truffles, substitute any liqueur of choice. You can also substitute any type of extract you would like such as almond, orange, lemon etc. You can actually divide the mixture and do one part with liqueur, one part extract and the other part as written by the recipe. Use your imagination here. The end result will be delicious Valentines Day Truffles.
