1/2 pound organic butter, softened
4 tablespoons sugar
2 teaspoons vanilla extract
1/2 cup light corn syrup
2 cups unbleached flour
2 cups broken pecan pieces (about 1/2 pound)
Powdered Sugar for dusting or rolling the cookies


Preheat oven to 250 degrees F

Work ingredients together in the order given in the ingredient list

Form the dough into 2 inch log shapes and place on baking sheet

Bake for about 45 minutes at 250 degrees F
Roll in powdered sugar while still warm

NOTE: These freeze well. Make sure you cool them completely and separate the layers with waxed paper. Enjoy
