1 1/2 pounds lean stew beef or chuck cut into bite sized pieces
3 tablespoons flour
1/4 teaspoon salt
1/4 teaspoon pepper
1 large onion halved and cut in 1/4 inch slices
1 tablespoon vegetable oil
1 large sweet potato, cut in 1 1/2-inch cubes
1/2 cup beef stock
1/4 to 1/2 teaspoon cinnamon
salt and pepper to taste
In a large ziplock bag, add flour and salt and pepper. Shake. Add beef (in batches if needed) and shake until beef is coated with flour mixture.
Heat the vegetable oil in a large skillet; brown beef and onion.
Meanwhile, mix the beef broth with the cinnamon.
Arrange the sweet potato cubes in the bottom of the Crock Pot; add beef and onions. Pour the cinnamon broth over beef mixture. Cover and cook on low 8 to 10 hours. Serve with white rice and/or home made biscuits.
