1 pound ground beef
2 onions chopped
48 ounce can V8 juice
1 can Ro-Tel tomatoes with green Chiles
1 can cream style corn
1 package frozen vegetables (your choice)
1 can kidney beans, drained
Brown ground beef in skillet with the onions until ground beef is no longer pink. Add the other ingredients and simmer on low about 40 minutes. Garnish with cilantro if desired and serve with tortilla chips. Top with sour cream if desired.
