3/4 cup vegetable shortening (I have substituted margarine with good success)
4 eggs, separated
1 cup granulated sugar
1 teaspoon vanilla
1/2 teaspoon salt
1 cup buttermilk
2 1/2 cups flour
1/2 cup cocoa powder, dissolved in 1/2 cup boiling water and cooled
Preheat oven to 375 degrees F
Grease and flour a 9×13 baking pan.
In a mixing bowl, beat the 4 egg whites, set aside.
In a large mixing bowl, mix vegetable shortening (or margarine) and egg yolks. Add the buttermilk and cooled cocoa alternately with flour. Fold in the beaten egg whites. Pour the mixture into the greased and floured baking pan. Put into the oven and bake for 30 to 35 minutes.
