1 8-inch flour tortilla (be creative here, use flavored or whole wheat. Whatever you like)
2 tablespoons prepared pizza sauce
Pepperoni slices, chopped into small pieces
3 tablespoons shredded mozzarella cheese
These are so easy. You can also make them ahead of time, just cover and refrigerat until ready to use.
Place tortilla on a plate. Evenly pread pizza sauce over it. Make sure the sauce is evenly distributed. Top the sauce with an even layer of the pepperoni. Use as much, or as little as you would like. Sprinkle cheese on top. Microwave until the cheese is just melted. (I put mine on parchment paper so I can easily remove them without burning my fingers), 30 to 45 seconds depending upon the oven. Carefully remove the tortilla from the microwave and roll the tortilla up. Cool completely before slicing into the sandwich rolls. Serve with additional pizza or spaghetti sauce on the side if desired.
