2 pre-made pie crusts
1 1/2 cups brown sugar
2 tablespoons butter – warm melted
3 teaspoons vanilla
2 cups of raw chopped pecans
1.Preheat oven to 350.
2.Roll out pie dough into a square. Cut each pie dough into 12 squares (so 24 total).
3.Place a dough square in each cup of a muffin tin and shape to cover the cup.
4.Fill each mini pie shell with pecan pieces.
5.Whisk together eggs, brown sugar, and vanilla extract. Mix in melted butter.
6.Spoon on enough pie filling to cover the pecans in each each pie cup.
7.Place muffin tins in oven for 15 minutes. Then reduce heat to 300 degrees and bake for another 15 minutes.
8.Remove Mini Pecan Pies from oven and allow to cool for five minutes. Carefully remove the pies from the pan.
9.Serve at room temperature and enjoy!
