1 1/2 cups quick oats
1 1/2 cup all-purpose flour
1/2 cup sugar
3/4 teaspoon salt
2 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon cinnamon
1/2 cup chopped pecans
1 egg, lightly beaten
3/4 cup milk
3 tablespoons butter, softened
1 1/2 cups cored, peeled and diced apples.
Whole pecans for top (optional)
1/2 cup oats (quick or regular)
2 tablespoons firmly packed brown sugar
2 tablespoons butter, softened
Preheat oven to 400°F.
In a bowl combine first 9 ingredients; stirring to combine. Add egg, milk and softened butter, stir just till moist, don’t over stir.
Fill greased muffin tins 2/3 full
Streusel: Place all ingredients in a small bowl and blend with a fork.
Sprinkle over tops of muffins.
Bake 20-30 minutes or until toothpick inserted in center comes out clean.
Place a whole pecan on top each of the muffins for an optional presentation effect.
Makes 12-14 delicious muffins!
