1 large head cauliflower
1/2 cup bread crumbs
2 3/4 cup shredded Swiss cheese
1 1/2 cup half & half or light cream
3 egg yolks, beaten
1/4 teaspoon ground nutmeg
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 cup melted butter
Fresh dill for garnish (optional)


Preheat oven to 350 degrees F.

Clean cauliflower and break into flowerettes. Discard the green leaves. Place flowerettes into a saucepan with a small amount of water, and cook for 7-10 minutes. Drain.

Place cauliflower in a buttered 1 1/2 quart shallow baking dish. Combine all of the remaining ingredients, except butter, and pour over cauliflower. Drizzle the butter over the top. Bake at 350 degrees for 15 to 20 minutes. Garnish with fresh dill if desired.
