3-3 1/2 pound baking pumpkin, unpeeled, deseeded, cut into wedges
4 red onions, unpeeled, quartered
4 whole peeled garlic cloves lightly smashed to release flavor (more or less garlic can be used to suit your own tastes)
Sea or kosher salt and fresh ground pepper
2 tbs olive oil
Fresh Rosemary leaves (to suit your own taste-optional)
Fresh Rosemary sprigs for garnish (optional)


Preheat oven to 350 degrees F.

Arrange the pumpkin, onion and garlic cloves in a single layer, in a large roasting pan. Sprinkle lightly with salt and pepper. Drizzle over the oil and toss to coat.

Sprinkle with the rosemary. Bake in oven for 1 hour 20 minutes or until tender. Garnish with addition sprig(s) of Rosemary and serve immediately.
