2 Tbsp butter
3 to 4 medium sized baking potatoes, cubed into bite sized pieces
1/4 cup chopped onions
3 ounces cooked ham, diced
1/2 cup shredded sharp cheddar cheese
Salt and pepper
Heat butter in a large cast iron skillet over medium heat.
Add potatoes,and onion and season lightly with salt and pepper.
Cook until bottoms of potatoes are golden brown, stirring occasionally to avoid sticking, about 10 min total.
Reduce to low heat.
Add ham and mix with potatoes.
Sprinkle cheese on top of everything, cover with a pan lid and let cook another 5-10 minutes until cheese if melted.
