1/2 C diced onions
1 tablespoon butter or margarine
4 C chicken broth
4 C peeled and diced potatoes **SEE NOTE
1 package of cream cheese (8 oz)
1/4 cup cheddar cheese (optional)


In a large saucepan, melt the butter or margarine, saute’ the onion in the butter for a few minutes, until onion is tender.

Add the broth and potatoes to the onions and butter in the saucepan. Stir to mix and simmer until the potatoes are fork tender.

Add the cream cheese and the cheddar cheese (if using) and mix, simmering until the cheese is melted and incorporated into the broth/potato mixture.

Garnish as you please. Some ideas are bacon bits (the real bacon pieces, not the artificial ones) and chopped green onion, or, you can add croutons and a bit of snipped chive. Add just about any topping you like to this easy, versatile soup. True comfort food. EAT!

**NOTE: You can add frozen vegetables to this as well to make a fast vegetable cheese soup. Just add about 1/4 to 1/2 cup of your favorite frozen mixed vegetables in along with the cheese.
