Pita bread rounds, 7 inch (1 round per serving)
2 large eggs, beaten
1 T. chopped onion
1 T real bacon bits, or 1 slice of cooked bacon, crumbled
1/2 a medium tomato, diced
1 large mushroom, sliced
Seasonings – your choice


Press 1 pita bread round gently into a medium microwave-safe bowl. Microwave at HIGH 1 1/2 minutes or until crisp. Repeat procedure with remaining pita bread rounds if making more than 1 serving. Set aside.

Heat a nonstick saute pan over medium high heat and spray with cooking spray. Saute’ the vegetables until at your liking. Add seasonings, such as salt, pepper, garlic, herbs, whatever suits you. Saute just until they smell good. Then add the beaten eggs. Stir once, then let cook until the eggs are almost set, fold in half and then distribute into pita bowls. Enjoy!
