Apple Doughnuts with Maple Glaze and Bacon



vegetable oil, for frying
3 3/4 C all-purpose flour
1 1/4 C sugar
1 Tbs baking powder
1/2 tsp baking soda
1 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 tsp ground allspice
1 tsp salt
2 large eggs + 1 egg yolk, lightly beaten
1/3 C sour cream
3/4 C plain applesauce
3 Tbs unsalted butter, melted
1/2 tsp vanilla extract

Maple glaze:

1/4 C maple syrup
1 1/2 C powdered sugar

preheat oil in a large dutch oven to 375 f.
In a large bowl, combine flour, sugar, baking powder, baking soda, cinnamon, nutmeg, allspice & salt.
In another large bowl, whisk together eggs + yolk, sour cream, applesauce, melted butter & vanilla extract until smooth. add the wet ingredients to the dry & thoroughly mix together using a wooden spoon. the dough will be very sticky.
Dust your work surface & hands with flour. using your hands, pat out dough to 1/2″ thickness. dip a 3″ round cutter in flour & cut out doughnuts. cut out center of doughnuts with a 3/4″ cutter. gather scrap & re-roll. continue cutting out doughnuts.
Fry doughnuts in hot oil until golden brown & crisp, approximately 1 minute per side. drain on a wire rack over baking sheet to cool.
Once cool, dip tops of doughnuts into the maple glaze {recipe follows} & top with bacon crumbles.
Maple Glaze
In a large bowl, whisk together syrup & powdered sugar until smooth.
Add enough milk to thin the glaze to the consistency you like!
{just know, if you make it too thin, it’ll slide right off the doughnut! you can always thicken it by adding more powdered sugar.}
