1 1/4 cups sugar
8 plums (red, yellow, or both), pitted and cut into 6 wedges each
2 limes, cut into wedges
10 ounces gin
Make a plum syrup by cooking the sugar and 1 1/2 cups water over medium heat until the sugar has completely dissolved. Bring the mixture to a boil and stir in the plums; stir once and remove from heat. Put in the refrigerator until chilled.
Fill glasses with ice (this recipe makes up to 10 cocktails) . Squeeze 1 lime wedge into each glass and put the squeezed wedge into the glass. Stir 1/4 cup syrup and 1 ounce gin into each glass. Add club soda to fill; stir. Garnish with plums if desired.
