For the bars:

1¼ cups boiling water
1 cup oatmeal
¼ pound butter
1 cup sugar
1 cup brown sugar
2 eggs
1 teaspoon vanilla
1½ cups flour
½ teaspoon cinnamon
¼ teaspoon nutmeg
½ teaspoon salt
1 teaspoon baking soda

Combine the water and oatmeal together in a mixing bowl and set aside. Cream butter and sugars with an electric mixer and add in the eggs and vanilla. Mix well. In small quantities at a time, add flour, cinnamon, nutmeg, salt and soda to wet ingredients. Add oatmeal.

Grease and lightly flour a 9-by-14-inch baking dish. Bake at 350 degrees for about 25 minutes or until cake tests clean.

For the topping:

12 tablespoons butter
1 cup brown sugar
1 cup coconut flakes
1 cup pecans, chopped
1 teaspoon vanilla extract


Blend all ingredients well in a medium mixing

bowl. When the bars have completely cooled, pat topping onto the top of the cake. Place under broiler until bubbly and brown sugar is cooked. WATCH THIS CAREFULLY! the sugar can BURN easily. Cut into squares and serve.

Serves 12 to 15.
