1 tablespoons olive oil
Whole chicken cut up into parts
1 lb chorizo (whole if baby ones or cut into 1½ inch chunks if regular sized)
1 lb new potatoes (halved)
1 red onions (peeled and roughly chopped)
1 can Rotel chunky tomatoes & chilies
1 (6 oz) can large pitted black olives
1 teaspoons dried oregano
Grated zest of 1 orange
Preheat the oven to 425ºF.
Put the oil in the bottom of a shallow roasting pan.
Rub the skin of the chicken in the oil, then turn skin-side up,
Add the chorizo sausages and the new potatoes.
Add onions, Rotel and olives and then the oregano over, then grate the orange zest over the entire contents.
Cook for 1 hour, but after 30 minutes,baste the contents with the orange-colored juices.
Serve with rice or potatoes.
