1 sweet potato, cut into fries
2 cloves garlic, minced
1 sprig rosemary, leaves finely chopped
1/4 tsp curry powder (optional)
sea salt and freshly ground pepper
1 Tbsp extra virgin olive oil
1 Tbsp parsley, finely chopped
Preheat oven to 425º.
Line a baking sheet with aluminum foil.
In a large bowl, add the sweet potatoes and drizzle them with the olive oil.
Add the garlic, and sprinkle with salt, pepper, the curry powder, and the rosemary.
Spread the fries out in a single layer on the baking sheet.
Bake for 35-40 minutes, until the fries are crisp.
Turn the fries two to three times during cooking.
Remove from the oven, and sprinkle with parsley and a bit more salt.
